Beetroot Puree

Ingredients:

  • 3-4 medium-sized beetroots, washed, trimmed, and peeled
  • Water for boiling
  • Salt to taste (optional)

Instructions:

1. Prepare the Beetroots:

  • Wash the beetroots thoroughly under running water to remove any dirt.
  • Trim off the tops and bottoms, and peel the beetroots using a vegetable peeler.

2. Boil the Beetroots:

  • Cut the peeled beetroots into chunks or cubes to ensure even cooking.
  • Place the beetroot chunks in a pot and cover them with water. Add a pinch of salt if desired.
  • Bring the water to a boil, then reduce the heat to a simmer.
  • Cook the beetroots for about 20-30 minutes or until they are fork-tender. The cooking time may vary depending on the size of the beetroot chunks.

3. Drain and Blend:

  • Once the beetroots are tender, drain them and let them cool for a few minutes.
  • Transfer the cooked beetroot chunks to a blender or food processor.

4. Puree the Beetroots:

  • Blend the beetroot chunks until smooth and creamy. You may need to scrape down the sides of the blender occasionally to ensure an even puree.

5. Adjust Consistency (Optional):

  • If the puree is too thick, you can add a little water, a tablespoon at a time, while blending until you achieve your desired consistency.

6. Serve or Store:

  • Use the beetroot puree immediately in your recipes or store it in an airtight container in the refrigerator for up to 3-4 days.

Notes:

  • You can enhance the flavor of the puree by roasting the beetroots instead of boiling them. Simply wrap the beetroots in foil and roast in the oven until tender, then proceed with blending.
