Quinoa and Veggie Stuffed Bell Peppers

Ingredients:

  • 4 Large Bell peppers (any color)
  • 1 Cup Cooked quinoa
  • 2 Cups Mixed vegetables (onions, carrots, spinach)
  • 1 Can Tomato sauce
  • 1 Teaspoon Oregano
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic Powder
  • Optional: 1 Cup Cheese

Instructions:

  1. Cut the tops off bell peppers and remove seeds.
  2. Mix cooked quinoa, chopped veggies, tomato sauce, and spices.
  3. Stuff the peppers with the mixture, bake until tender, and optionally top with cheese.
