This sweet potato puree is a delicious and nutritious addition to your meals. Use it as a base for soups, fillings, mashed potato alternatives, baby food, or simply enjoy it as a tasty and comforting side dish!
Ingredients:
- 2-3 medium-sized sweet potatoes
- Water for boiling
- Pinch of salt (optional)
- Butter or olive oil (optional, for added richness)
- Optional: 1/2 cup bone or vegetable broth
- Seasonings (optional, like cinnamon, nutmeg, or a sprinkle of brown sugar for a sweeter version)
Instructions:
1. Prepare the Sweet Potatoes:
- Wash the sweet potatoes thoroughly under running water to remove any dirt.
- Peel the sweet potatoes using a vegetable peeler.
2. Boil the Sweet Potatoes:
- Cut the peeled sweet potatoes into chunks or cubes for even cooking.
- Place the sweet potato chunks in a pot and cover them with water. Add a pinch of salt if desired.
- Bring the water to a boil, then reduce the heat to a simmer.
- Cook the sweet potatoes for about 15-20 minutes or until they are fork-tender.
3. Drain and Mash (or Blend):
- Once the sweet potatoes are tender, drain them and let them cool for a few minutes.
- Transfer the cooked sweet potato chunks to a large bowl.
- Mash the sweet potatoes using a potato masher until smooth and creamy. Alternatively, use a blender or food processor for a smoother puree.
4. Add Optional Ingredients:
- For added richness, mix in a tablespoon or two of butter or olive oil.
- For more liquidy consistency, add bone or vegetable broth.
- If desired, season the puree with cinnamon, nutmeg, or a sprinkle of brown sugar for a sweeter profile. Adjust to taste.
5. Serve or Store:
- Use the sweet potato puree immediately as a side dish or as a base for various recipes.
- Store any leftover puree in an airtight container in the refrigerator for up to 3-4 days.
Notes:
- For a roasted flavor, you can bake the sweet potatoes in the oven instead of boiling them. Pierce the whole sweet potatoes with a fork, place them on a baking sheet, and bake at 400°F (200°C) for about 45-60 minutes or until tender. Scoop out the flesh and proceed with mashing or blending.
- Customize the puree by adjusting the seasonings or adding ingredients like maple syrup, herbs, or spices to suit your taste preferences.
