Tomato Jam

Transform tomatoes into a savory and slightly sweet condiment that pairs well with various dishes.

  • 2 lbs ripe tomatoes, peeled and roughly chopped
  • 1/2 to 3/4 cup honey or maple syrup (adjust to taste and desired sweetness)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cumin
  • Pinch of salt

Instructions:

1. Prepare the Tomatoes: Score, blanch, peel, core, and roughly chop the tomatoes.

2. Cook the Jam: Combine the chopped tomatoes, honey or maple syrup, lemon juice, grated ginger, cinnamon, cloves, cumin, and a pinch of salt in a saucepan.

3. Simmer and Reduce: Bring the mixture to a gentle boil, then reduce the heat and let it simmer. Stir occasionally to prevent sticking. Cook until the jam thickens to your desired consistency (around 1 to 1.5 hours).

4. Check for Consistency and Adjust: Test the jam’s consistency by placing a small amount on a chilled plate. Once it sets without running when tilted, it’s ready. Continue simmering if it’s too runny.

5. Cool and Store: Remove from heat, let it cool to room temperature, then transfer to sterilized jars or airtight containers. Store in the refrigerator for up to a month.

  • Both honey and maple syrup impart their own distinct flavors, so choose the one that complements your taste preferences.
